Hi Amy, even it’s OK to freeze Minestrone leftovers, I don’t recommend freezing it if you want to serve it for the Holiday. Instead, you can do all the prep work of peeling and cutting the vegetable a few days in advance and cook the soup the day before. Remember also to boil pasta/rice separately as if set sit for too long it’ll loose its texture. Happy Holidays!

If starting with dry beans, soak about 3/4 cup of dry beans overnight in cold water (or pour boiling water over the beans and soak for 1 hour). Drain. Cover with a couple inches of salted water and bring to a boil. Reduce heat and simmer for an hour, or until tender enough to eat. Then drain and use in this recipe as directed.

In the three years I was in Rawene, I learned much. However, the ara wairua is now calling me to move into a deeper layer of my whakapapa. In the end, all life is about whakapapa. We are the sum of all those who have gone before us.

He studied at Lincoln Theological College from 1953 and was ordained as a priest in the Church of England in 1955. He moved to Romney Marsh to become curate of Hythe in Kent. He was appointed as vicar of Christ Church at Lancaster Gate in Paddington in 1958.
